Microgreens at Heritage Prairie Farm

WHAT ARE MICROGREENS?

Microgreens are the edible young seedlings of immature plants, harvested at 7-14 days after germination. Typically ranging in size from 1-3 inches tall, Microgreens are older than sprouts and much younger than petite or baby greens.

 

Microgreens are specifically selected for their unique color and flavor. These tender greens have two fully developed cotyledon leaves, with or without the emergence of a few first true leaves. It is these young cotyledon leaves, often referred to as the “seed leaves,” that possess higher nutritional densities.

 

After gaining popularity in the mid-1990s, these tender greens have exploded in popularity. We began growing Microgreens at Heritage Prairie Farm in the winter of 2007, and within a short time they were being sold at farmers markets and being used at area restaurants such as Marriott Chicago, The Finery, and Sovereign.

 

By 2010, Heritage Prairie Farm Microgreens were one of the first Midwest farms to make Microgreens commercially available to consumers at retail outlets like Whole Foods Market in the Chicago-land area.These nutritious greens are now available through our online ordering or as a part of your Summer CSA box so that you never run out of Microgreens!

WHY MICROGREENS?

MADE WITH SUN, SOIL & SOUL

In recent studies by the USDA, Microgreens were discovered to be more nutrient-dense than their mature counterparts when compared with the records in USDA National Nutrient Database.

 

Dietary guidelines now recommend people to fill half of their plate with fruits and vegetables because they possess benefits for human health. Particularly with foods rich in vitamins C, E, A, K (and phytonutrients such as carotenoids, polyphenols, phytoestrogens, and organosulfurs).

 

Countless studies have shown that the consumption of fruits and vegetables is strongly associated with reduced risk in the development of chronic diseases and cancers.

HOW ARE THEY GROWN?

Unlike sprouts, Heritage Prairie Farm Microgreens obtain their nutrients from three places: the rich, organic soil, natural sunlight photosynthesized by the plant, and nutrients produced by the seed itself.

 

In recent studies, when compared to sprouts, Microgreens bear a relatively lower food safety risk. Heritage Prairie Farm Microgreens are always triple-washed for your convenience and safety.

Heritage Prairie Farm Microgreens are currently Certified USDA Organic.

That means our farmers don’t use any synthetic herbicides, pesticides, fertilizers, or genetically modified organisms.

Microgreens can be used as an edible garnish that can brighten any dish.

 

They also make a great topping or nutritional supplement to nearly anything.
